Technical question on XGS-PON

I get the basics that the fiber to my house is shared via passive optical splitters and combined with others. My question is that with the other subscribers that get combined onto the fiber is it "shared" in the sense that there is only 10G/10G bandwidth back to one port in the central office? In other words, my speeds are 500/500, and my understanding is that it is shared among others on the fiber, not dedicated bandwidth. If this is the case, how would the company manage load if a bunch of people on the network get on with large downloads/uploads all day? Are there ways they can segment further? I realized at some point, the network is always "shared", but is this similar to cable where all the subscribers on the coax share some larger maximum bandwidth? Hopefully my post makes sense.
